Gearing up for the Self Challenge – starting today

I am not that big on reading magazines, but my favorite one–which I never let the subscription run out on–is Self. Its full of great articles, personal stories, recipes, exercise, beauty tips, and more, yet never goes too heavy on the celebs or the hokey stuff. Just realistic, down-to-earth information. Every year, they do a Self Challenge in the spring, and I haven’t done it in about 5 years. When I got this last issue and saw the awesome menu plan for the challenge and the very doable exercise plan, I decided it would make for a great April challenge here on the blog. But, since I wanted to start on a Monday, we are getting started a little bit early.

I just enjoyed my first breakfast on the plan – whole wheat toast with ricotta, apricots, and walnuts. It was easy to make and delicious. Looking forward to trying out all the new recipes and getting some new meals to add to my repertoire for after the challenge, too.
